Overide lastest booking time for admin/walk-ins

Our latest booking time is setup as an hour before we close to stop customers from booking tables in our last hour of opening. However, when we get walk-ins in the last hour, depending on the situation, we will often seat them.

When we try and add the late walk-in to Collins, we are unable because the booking types are not allowed at this time.

Would it be possible to override this for admin / walk-ins?
